11.取30克棗泥平攤開,放入無花果(每個重5-7克)
12.捏緊團圓,依次按11步驟包好棗泥餡
13.轉化糖漿75克 ,梘水1克,冷榨花生油25克,放入盆中調勻
14.篩入中筋麵粉100克,奶粉5克,揉成麵團,靜置醒發2個小時
15.將醒發好的麵團分成每個重15克的小劑子,團圓
16.將麵團壓平放入棗泥餡
17.用左右手虎口位置不斷的推轉麵片
18.逐漸推轉 ,讓麵片均勻包裹在餡上
19.封口團圓
20.放入模具中 ,壓出月餅
21.烤箱預熱200度上下火 ,在月餅上噴水 ,放入烤箱中層烤5分鍾後待表皮花紋固定後
22.5分鍾後待表皮花紋固定後,在月餅表皮上刷少許薄蛋液
23.放入烤箱烤15分鍾直到表麵金黃即可出爐
24.晾涼後密封保存等待3天順利回油
