1.豆腐切塊,皮蛋每個切成四丫。炝豆
2.12將青椒、大蔥洗淨切塊 ,虎皮薑切片 。皮蛋
3.21待鍋熱後倒入色拉油,我是用煎的 ,所以沒有用很多油。先倒入皮蛋煎。
4.一麵煎黃後再翻麵煎 。
5.剩出皮蛋再煎豆腐。
6.1將薑片、青椒放入鍋裏煸炒 。
7.2兩麵煎成略黃後剩出來。將鍋裏多出的油也剩出來,留一點在鍋裏 。
8.待青椒煸至略黃後,放生抽,十三香 ,白糖。(可能根據自己的口味來調整調料的多少)我的口味比較淡,不能吃辣 ,所以十三香加得比較少。
9.放入調料後炒兩下 ,再放入煎好的豆腐和皮蛋,快速炒動 ,中間不要停以免糊鍋 。最後放入大蔥,少許鹽和味精,加點水,翻炒兩下入味後便可以關火出鍋。
10.能吃辣的朋友可以放些醬椒 ,換以前我就會用醬椒了,這樣色澤上也會更好看。
